We are long overdue for a new dining establishment in the esteemed **[Raffles](https://sethlui.com/raffles-place-food-guide-singapore/) Hotel**, and renowned Taiwanese chef **[André Chiang](https://en.wikipedia.org/wiki/Andr%C3%A9_Chiang)** is here to address that. He has collaborated with Raffles Hotel to put together a gastronomical experience unlike anything before — **1887 by André**.


If you’re like me and don’t follow _atas_ food news, here’s a rundown of who Chef André is and why he’s so significant. Chef André’s a bit of a MICHELIN star collector, with a total of 7 MICHELIN stars under his belt, including one for his former Singaporean establishment, **Restaurant André**, which closed in 2018.

The opening of 1887 by André marks his proper return to Singapore’s culinary world, with the restaurant housed within Raffles Hotel’s historic formal dining room. Fun fact: the restaurant’s name was named after the hotel’s opening year of 1887.


While the full menu of delights offered at 1887 by André isn’t ready yet, we’ve been told that it will be a culinary journey through time. It will utilise Chef André’s unique ‘Octaphilosophy’ concept, where 8 components make up every dish.

The menu will comprise imaginative reinterpretations of historically significant dishes from the hotel’s storied history, along with Chef André’s fun and interesting twists on uniquely Singaporean dishes made with locally sourced ingredients.

You’ll also be served beverages ranging from strong spirits, classic wines, to alcohol-free Nanyang-inspired drinks. If you’re lucky, you’ll also be able to catch a glimpse of the legendary silver beef trolley that survived World War 2.


1887 by André will open on **31 Mar 2026**, and reservations are already available at **S$198++ per pax**.
