A new culinary director from a “food-centric” family has transformed a [Connecticut restaurant’s](https://www.courant.com/2026/08/14/newly-renovated-ct-hotel-in-historic-setting-wins-preservation-award-dubbed-beloved-and-welcomed-back/) menu into a feast of fresh meat off the farm, seasonal vegetables and fruit, and local products.

Guests will recognize the fresh ingredients as those they see in the grocery store, new culinary director Vincent Gilberti said and management describes the new fare as “unfussy, abundant and deeply satisfying dishes.”

It’s one-of-a-kind fine dining, as some of the offerings are: radicchio and red endive salad with maple Banyuls vinaigrette, apple and almond; ricotta agnolotti with chanterelle, corn and Parmesan; miso-glazed black cod with cranberry beans, aji dulce and garleek; and grilled beef strip loin with salsa Rossa & summer squash.

But Gilberti strives for no one to leave hungry or unsatisfied after their experience in the dining room of [Belden House & Mews luxury hotel in Litchfield](https://beldenhouse.com/). There are no more delicate portions or unrecognizable foods.
