Luxurious dining setting at NUNA, Four Seasons Hotel Miami, with a focus on a beautifully plated Nikkei dish.
On Thursday, June 11, 2026, the Four Seasons Hotel Miami officially announced NUNA, Chef Jaime Pesaque’s acclaimed Nikkei concept, has secured a permanent residency within the property. This follows a successful year-long pop-up that quickly established NUNA as a culinary highlight.
NUNA, recognized for its fusion of Japanese techniques and Peruvian flavors, quickly gained traction with both locals and visitors. The restaurant operates under the direction of Chef de Cuisine Nazaev Esparza. Its elevated Nikkei-inspired menu features a range of ceviches, sushi rolls, yakitori, and hot dishes, all crafted with premium ingredients.
Signature dishes include the NUNA Ceviche, a vibrant seafood preparation, and the Arroz con Pato, a rich stir-fry of duck and foie gras with distinctive Nikkei inflections. The menu also highlights a selection of fresh nigiri.
This new chapter for NUNA introduces a dedicated Tasting Counter experience. This intimate setting provides guests an up-close view of the culinary artistry, offering a curated selection of bites such as Royal Crab Croustade, Lobster Blini with caviar, Uni Crispy Rice with bone marrow, Toro Tostada, and Wagyu with truffles.
Haytham Said, General Manager at Four Seasons Miami, noted to WebWire that the response to NUNA 'has exceeded expectations,' and making it permanent allows for continued evolution of the dining experience. Chef Pesaque is a prominent figure in modern Peruvian cuisine, known for his flagship restaurant Mayta, which has been recognized on The World’s 50 Best Restaurants list. At NUNA, he translates this global perspective into a menu focused on vibrant Nikkei flavors, premium seafood, wagyu, and refined presentations.
Our take: The Four Seasons Miami's decision to make NUNA a permanent fixture underscores the rising prominence of Nikkei cuisine in luxury hospitality. Chef Pesaque's reputation, combined with the hotel's imprimatur, positions NUNA as a formidable contender in Miami's competitive fine-dining landscape. The introduction of a dedicated Tasting Counter further elevates the experience, catering to a sophisticated clientele seeking culinary theater alongside exceptional food.
