On Thursday, June 11, 2026, the Four Seasons Hotel Miami officially announced NUNA, Chef Jaime Pesaque’s acclaimed Nikkei concept, has secured a permanent residency within the property. This follows a successful year-long pop-up that quickly established NUNA as a culinary highlight.

NUNA, recognized for its fusion of Japanese techniques and Peruvian flavors, quickly gained traction with both locals and visitors. The restaurant operates under the direction of Chef de Cuisine Nazaev Esparza. Its elevated Nikkei-inspired menu features a range of ceviches, sushi rolls, yakitori, and hot dishes, all crafted with premium ingredients.

Signature dishes include the NUNA Ceviche, a vibrant seafood preparation, and the Arroz con Pato, a rich stir-fry of duck and foie gras with distinctive Nikkei inflections. The menu also highlights a selection of fresh nigiri.
